carrot chocolate chip cookies

Time is approaching 10pm. I'm craving some chocolate chip cookies, because the 1/3 of a pint of Ben & Jerry's Cinnamon Buns isn't enough.

I have a snack size bag of quick make cookie mix is the pantry but I would like to make something healthier to snack on, and I'm not sure that Mrs. Crocker has my best interests in mind. (but B&J do? I'm obviously confused in life)

So I pulled from Pinterest and found this little gem:

Love & Lemons - Carrot Chocolate Chip Cookies

I'm not vegan, so I followed the recipe a little differently.


Ingredients
  • 6 tablespoons flour (she used half spelt, half millet, but half white/wheat would work) (I used all-purpose)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground nutmeg
  • 1/8 teaspoon cinnamon
  • 1/2 tablespoon ground flax seeds plus 1.5 tablespoons warm water  one egg
  • 1/2 cup grated carrots
  • 1/4 cup butter (or vegan butter or melted coconut oil)
  • 3 tablespoons brown sugar
  • 1/2 teaspoon vanilla
  • 1/4 cup oats
  • 1/4 cup chocolate chips
  • 1/4 cup walnuts ( I was out so these were omitted)

Guide to Yum!
  1. Mix together flour, baking soda, salt, nutmeg, and cinnamon.
  2. Grate carrots into large bowl. Add brown sugar, egg, vanilla, and butter.
  3. Once wet ingredients are combined, stir in flour mixture.
  4. Chill mixture in fridge for 15-30 minutes. Turn on oven to 375 degrees and line cookie sheet with wax or parchment paper
  5. Remove dough from fridge and stir in chocolate chips, oatmeal, and walnuts.
  6. Scoop heaps of dough onto cookie sheet a few inches apart. (this is a small batch and makes 12 cookies perfectly!)
  7. Bake for 10-13 minutes, or until edges are golden brown and slightly crispy.
  8. ENJOY!
